Of all the cities I visited on this trip, Cordoba stood out as my absolute favorite. Here are some highlights that made it so memorable:

1. Cordoba is a photographer’s dream, with stunning vistas around every corner. Make sure your camera is always at the ready to capture the picturesque scenes.
2. The city is also home to an abundance of friendly pigeons. They roam freely, unafraid of people, and can often be seen foraging for food in the streets.

3. Accommodation in Cordoba is surprisingly affordable compared to other popular tourist destinations in Spain, making it a great choice for budget-conscious travelers.
4. Seafood lovers will be delighted by the variety of squid dishes available. Each one is tender, fresh, and absolutely delicious—feel free to indulge without any hesitation.

5. Near the Cordoba Mosque, there’s a fantastic Argentine empanada place that comes highly recommended. Despite the thick dough, the empanadas bake up crispy and perfectly cooked. I tried three flavors: spicy beef, Moroccan chicken, and tuna, and each was a delightful explosion of flavor. The owner, a slightly shy young man from Buenos Aires, serves these treats for about 3.

6. Just a short walk from the mosque, you’ll find a charming little egg tart shop. Even early in the morning, when most local eateries are still closed, this place is already bustling. The gentlemanly African young man who served us presented egg tarts with a wonderfully crispy crust, even when cold.

At just 1.8 euros each, they were a sweet and satisfying start to the day.
7. One of Cordoba’s signature dishes is oxtail stew, where the meat is slow-cooked to a melt-in-your-mouth tenderness. It’s a bit on the salty side, but the rich, savory flavors make it a hit, especially for those who enjoy Chinese cuisine.

8. A popular appetizer in Cordoba is “honey-fried everything,” including sweet potatoes and eggplants. These dishes are reminiscent of Northeastern pulled sweet potatoes, minus the strings, and offer a delightful blend of sweet and savory. While incredibly tasty, their sweetness means they’re best enjoyed in moderation.
